It’s a torta with breaded flattened chicken called Milanesa the cheese looks like Oaxocan cheese (I’m probably wrong) cause of the stringyness and pull of it. And veggies. The sauce is definitely not mustard.

level 2

It has to be Oaxaca

level 3

Actually Cemitas are made in Puebla :)

level 4
81 points · 4 months ago · edited 4 months ago

Yeah but I’m 99% sure this is in Oaxaca. I saw the video this is from. Edit: see below. The cheese is Oaxaca, the sandwich shop is in Puebla. Oof.

level 5

They're not talking about where it's made, they're talking about Oaxaca, the type of cheese.

Just letting you know, this sandwich was made in Puebla along with the video. Having been there and eaten there myself. 4 Poniente 1109 col centro, Centro, 72000 Puebla, Pue., Mexico

level 8

Well I can’t argue with that, having only seen the video once a month ago. Cheers.

level 9

Here's the video, in case you want to refresh your memory.

level 10

Eh, i have no way to eat the sandwich, I’m too hungry to watch the sandwich

level 8

Just got back from a vacation in Puebla, can confirm this is the location.

level 5

It's Oaxacan cheese, but for cemitas they usually just call it "quesillo."

Cemitas are traditionally from Puebla.

level 6
3 points · 4 months ago

People from oaxaca call oaxacan cheese "quesillo" ... I've heard in oaxaca "queso oaxaca" is something else

level 2

Fuck. Me. Up. I want one NOW.

level 2

Yes, almost looks like mozzarella w the strings! I love chicken Milanese

level 3

It's like mozzarella but a little dryer and slightly saltier.

level 4

That sounds amazing.

level 2

Oaxaca cheese, (queso Oaxaca or quesillo) is a white, semi-hard cheese from Mexico, similar to unaged Monterey Jack, but with a mozzarella-like string cheese texture.

The sauce is almost certainly a chili sauce.

level 3

I think it might be a vinaigrette. Spicy sauce is never that watery, it might be squeezed lemon juice as well

level 2

It is Oaxocan cheese. Had a Cemita for the 1st time the other day and oaxocan was the listed cheese

level 2

What really drives me crazy is how hard it is to get good Mexican cheese in stores in my area. They carry queso fresco and queso "Blanco", which are amazing, but if I want to get good Mexican cheese I have to go to tiny Mexican markets that are completely out of the way of where I live.

We have a giant Mexican and Cental American population in my area but they won't stock good products from those areas.

level 3

I guess it really cheeses you

level 2

Also looks like it has onions, avocado, and cilantro. What's the sauce, though??

Ain't nothin in this world that compares to a milanesa pollo torta on a fresh telera roll.

i am italian and this is what we call "cotoletta" that is made out of chicken. the original "cotoletta alla milanese" is made out of fried calf flattened steak with bone

I found the hand shot where he tries to disconnect the halves disturbing.

level 2

After the fast finesse displayed beforehand.. It was like a joke ending.

level 2

Awkward, for sure

level 3

But a welcome one.

level 2

Alex for $200, what is a knife used for?

level 2

Someone mentioned above that this was a clip from the Food Ranger, a foodie vlogger. Perhaps he was holding the camera with one hand and attempting to eat the sandwich with the other? Either way, you're right. Although, I found it more annoying than disturbing. Fucking rip it apart already! I can't stand the guy. He's every cringy foreigner I met while living in South Korea and traveling through Asia. And now, because he's so popular, every other food vlogger as taken cues from him and become a clone of his channel.

level 3
34 points · 4 months ago

His show is awesome. His wife does the camera work for him. But here you might be right. His show always makes me hungry especially his Mexico trip. but it’s funny hearing him speak Chinese and surprising people. I know what you mean though, when I first started watching he was annoying but he’s grown on me. He’s just a wholesome dude who is overly nice.

level 4

I think I'm particularly salty in regard to this subject since I taught EFL in South Korea for a number of years and there are so many stereotypes that are hard to avoid and this guy just ticks all the boxes for things to avoid.

level 5

Such as? Just curious

level 3

Brother you clearly see two hands in that shot.

level 2

I mean the cheese stretching as the halves get pulled apart has to be the Money Shot, right? How do you not get the Money Shot?!?!

level 2

Yes. But it also triggered me that he was about to eat it right next to the food prep bins. If not almost on top of the prep bins!

level 2

“Okay, let’s do another take!”

level 2

Ruined the video. Nothing drives me, a chef, more insane then when someone can’t pick up a sandwich. C’mon, show that fucker who’s boss.

WTF is that accent?!

level 3

Canadian

level 2

Thank you, but ugh that guy's voice was annoying as fuck. We get it... they're putting on a lot of cheese and avocado.

level 3

oooh, just loading that cheeeese

level 3

It's like he has little actual commentary so he just says "Oh yeah" and then repeats the same thing 6 times until the lady starts putting different ingredients on the sandwich.

level 4
24 points · 4 months ago

The hilarious thing is that when he speaks chinese, he literally says that too. "Oh yeahhh, very good". Tai hao laaaa.

level 4

Hmm, don't want to sound like a fanboy or anything but I think this guys videos are great. The same MMM OH YEAH reaction does get a bit tiresome after a while but you can really tell he loves food and what he does. Most of the videos on his channel are in China (as he lived there for a time and learned Chinese for 7 years in Canada), but his India videos are great too. Don't hate his reactions too much, him and his wife seem like pretty nice people.

level 5

I quite enjoy his video as well. My favorite is chu chu... the sidekick he had in on of the videos.

level 6

Chu chu the cute one. But the shit she says are even more dumb

level 2

Why isn’t godlevelstreetfood a subreddit, sounds amazing.

level 2

Can't watch it... hate that guy. He makes Guy Fieri seem like someone I would have over for dinner

level 3

Tbh, I wouldn't mind someone taking a bite into my food exclaiming, "Whoa I just took a one way ticket to flavor town!!!" Flattering me the rest of the night. He's probably got some cool stories too.

level 4

From all accounts I've heard, Fieri is actually a really nice dude, also. I'd totally have him over for dinner and feedback.

level 5

Same. He annoys me, but I've heard he's a nice guy and does a lot for his hometown (like he cooked for all the first responders for the CA wildfires last year).

level 1

Can I just have a container of flattened fried chicken

So how safe is it in Puebla?

level 4

Puebla. Puebla is a center of incredible food.

level 4

All over Puebla

level 2

Lots of Mexican places in the US have similar sandwiches, they’re called tortas!

level 3

Most tortas I've seen don't have cheese, let alone that much of it. I think that the cheese is half of what makes this unique and interesting.

level 4

I’ve never seen it with cheese like this either, but otherwise it looks pretty standard. I would love to try one like in this gif, but tortas are delicious regardless.

level 5

Looks similar as in it's a Mexican sandwich but the bun flavor and the sauces are also different. I've never had a cemita but damn it if I'm not craving a torta now! Perfectly toasted with just the right amount of beans... I don't think I should be visiting foo subs right now.

level 4

I can't remember the last time I had a torta without cheese on it.

level 5

Which type has cheese? I can't think of a torta that would have cheese other than maybe a little cotija or something. I suppose a torta de jamon would. I'd imagine it's also a regional thing.

level 6

Whatever I order always seems to have some queso fresco on it. I live in the Bay Area.

level 4

From where are you getting your tortas that they aren't as dope as these ones?

level 5

These aren't tortas so I'm not sure what you mean? They're each their own thing but I'm sure cemitas are just as delicious as tortas.

level 6

yep Torta's are different. how about a sopa (sopas?) I havent been able to find a restaurant that makes them. That corn bread bed topped with delicious ingredients.

level 7

Sopes? They're a thick masa base with toppings (usually beans, meat, lettuce, etc...) Where I live most authentic places have them. I live in Mexican food mecca for America though. You have to go to hole in the wall places to find a good sope.

level 8

Well, i'm still on the hunt. Where I went today they weren't offering sopes, but the tortas and tamales were off the chart. The bread was so fresh it was like they just baked it, and the corn on the outside of the tamale was delicious, I wish you could have had a bite so you don't just have to take my word for it!

level 3

Tortas are a lot smaller than cemitas tho. Both great

level 3

Had a cemita just the other night in Brooklyn. Was delicious.

level 3

Tortas are not Cemitas. Tortas are more.common, but you can definitely get Cemitas.

level 3

Similar, but it just ain't the real thing. It sucks, even in SF, in the Mission, with tons of Mexican places, you can't get a cemita. They're a very particular Pueblan sandwich.

Just discovered this place the other day if you happen to be in the Queens, NYC area.

level 1

I’ve always wanted one of these. Apparently there is a really good place in Chicago I believe where they went on diners drive ins and dives once that serves cemitas

level 2

Is it Cemitas Puebla maybe? I'm going into Chicago today and this looks amazing. I'm going to try and convince my gf this is where we are going for lunch

level 2

There is. Cemitas Puebla in the west loop!

level 3

go while you can... all their locations seem to be collapsing in on themselves

level 4

Yup.. they spread themselves thin, should of just shuck with the old place on the west side.. it had some character

level 5

The owner of the building upped their rent way too high, even after they really did a nice job redoing the interior. The relocation in Logan Square was always temporary, and in Hyde Park there was some issue with the alcohol.

level 1

I don't know if she's putting on a demonstration or just doing her day job exactly how she always does it, but she deserves some major props for it. I can't imagine how tired she must feel at the end of the day.

level 2

I've seen them in a normal day and it's always like this, they're quite good at it.

Good lord! I wish I could pare an avocado at even 20% her speed!

level 1

level 3

No, lo siento. Estoy en Puebla, México.

level 1

All for 70 pesos. Man I love Mexico.

level 2

Nah, cemitas are way cheaper they're like MXN$30-45, which is like US$2.

level 1

what the fuck. that shit looks more dry than Antarctica

level 2

What they didnt show was the salsas that they have on the side usually, and the pickled jalapenos/onions/carrots. Those help out a lot, but yeah the sandwich itself is a dry sandwich.

level 2

Even with all that avacado and the sauce?

level 3

avocado isnt that juicy and there wasnt much sauce put on it

level 4
14 points · 4 months ago

Avocado is just nature's mayo

level 4

100g of avocado is about 70% water. An apple for comparison is about 85%.

level 5

Are you implying that the water makeup of avocado is based on the serving size?

level 6

Well yeah, 200g of avocado is 140% water. Come on!

level 6

haha. That's a good point. I meant to write 70g, and that makes up 70% which is redundant. Either way avocados are pretty water dense as far as fruit go and in my experience are on par to many spreads we use for samiches anyway.

level 5

avocado is mush though and not really damp

level 6

So is just about any sauce?

Take an avocado, and place it on a paper towel. The paper towel will get wet.

level 3

Yes

level 2

I got one in NYC and they included a spicy chipotle type sauce and pickled onions. Also, the avocado gives it way more change in texture than expected, if that makes sense.

  • Avocado

  • "Milanesa de Pollo" – flattened, breaded, and fried chicken (or sometimes 'milanesa de res' – beef – instead) *Edited, I mistakenly called it beef at first.

  • Queso Oaxaca – stringy, mozzarella-like cheese that gets hand-pulled

  • More avocado

  • Cilantro or papalo leaves

  • Onion

  • Chipotle sauce – literally chipotles in adobo pureed to a thick sauce

  • And of course, the 'cemita' – sesame seed roll

level 3

It was definitely chicken.

level 4

Good call. I rewatched, and it's clear when they slice into it at the end that it's chicken not beef. Thanks, edited.

level 3

Oh man, milanesa de res is my preference. So, so good.

level 2

You’ve never seen an avocado?

This post didn’t require downvotes. It’s a really big world of food out there and the internet connects us all together with things we aren’t familiar with. I had no idea what most of that was either because probably nobody within a thousand kilometres of here makes that stuff. I couldn’t have even guessed if it was characteristic of a certain region.

level 3
0 points · 4 months ago

I had no idea what most of that was either because probably nobody within a thousand kilometres of here makes that stuff.

I really don't understand how you could not recognize:

  • avocado

  • string cheese

  • fried chicken

  • onions

  • bread

Maybe if it was your first week on Earth...

level 2

You've literally never seen an avocado in your life?

level 1

Looks more like a torta to me

level 2
66 points · 4 months ago · edited 4 months ago

It's not dissimilar to a torta de milanesa, but a few key differences make it a cemita:

  • The 'cemita', the slightly sweet sesame seed roll.

  • The pulled oaxaca cheese

  • The chipotles in adobo sauce

  • Lack of mayo or mayo-based sauce

It's sort of like a foreigner calling a 'cheesesteak' a 'cheeseburger'. On the face they're both beef and american cheese sandwiches, but try telling that to a Philadelphian.

level 3
3 points · 4 months ago · edited 4 months ago

I've also never seen a torta with papalo, which is (I believe) usual for a cemita. It's like a super cilantro, really fresh tasting, and super easy to grow.

Edit: and of course someone else already mentioned it in a comment. My fingers are so damned slow!

level 2

A cemita is kind of like a torta in that it's Mexican and it's a sandwich. The ingredients can be similar but the bread is different. It's the local sandwich of Puebla.

level 1

This is the lowest quality gif I have ever seen.

Dem’ some fucking good samwhiches.

level 1

Now this shit surely deserves 15 bucks an hour.

level 1
