The news a few hours ago was that they had asked the judge something to the effect "What if we can't reach a consensus on a charge". That led people to believe they had reached consensus on 17 of the 18.

Here is the difference in your ribs. I love doing back ribs. One thing is that I have heard of disreputable butchers that will carve out almost all of the meat on them and by the time it's done cooking, there is not much to eat. So ask to see them first.
The short ribs are probably sold individually. They have a big chunk of meat on top of a sawed rib bone. Each one is usually a serving. But they may be selling them as a "rack". I've bought and done them this way before.

I've never dry-brined beef ribs. I guess you could do it like this but seems messy. Just put pepper in the rub/dry brine.
